Recipe for traditional Dutch Vla Pudding

Vla is a very old Dutch treat, dating back to at least the 13th century. It strongly resembles modern puddings or custards.

Vla was originally sold in glass bottles, but the thickness made it difficult to get out, which led to the invention of a Bottle Scraper, many of which can still be found today even though vla is now sold in cartons.

2 Eggs
50g / 2.5 Tbs Sugar
30g / 2.5 Tbs Corn Starch
1L / 4 Cups Milk
1 Package Vanilla Sugar (1Tsp Vanilla Extract can also be used for 1tsp vanilla sugar)

 

Instructions

In a bowl, beat the eggs with some sugar, stir in the corn starch and then the rest of the sugar. In a pan, bring the milk to a boil with the vanilla sugar. Add the hot milk to the egg mixture, whisking constantly. Return the mixture to the pan and let the custard, still whisking, gently boil for 1-2 minutes. Remove the pan from the heat and let the custard cool. Stir occasionally in the custard to prevent a sheet from forming. Transfer the custard to a glass dish.

Variations

Vanilla cream custard: make custard with 3/4 liter of milk and stir in 1/4 liter of whipped cream through the cooling custard.

Foamy vanilla custard: separate the eggs, make custard from the yolks, sugar and corn starch. Beat the egg whites and add to the cooling custard.

Chocolate Custard: Use cocoa powder instead of vanilla sugar.
