Kruidnoten

A recipe for mini gingerbread cookies, kruidnoten.

Kruidnoten are a little speculaas cookies, like gingerbread, that are popular around the holiday season. They come in almost endless varieties, from chocolate to caramel to even tiramisu!

Ingredients:

  • 1 ¾ cups self rising flour (or make your own using 1 cup all purpose flour, 1 ½ teaspoons baking powder and ½ teaspoon salt)
  • ½ cup Van Gilse Donker Basterd Suiker (or use regular brown sugar)
  • 7 tablespoons (3 ½ ounces) unsalted butter
  • 2-3 tablespoons milk
  • 4 teaspoons speculaas spices
  • ½ teaspoon baking soda
  • 1 egg white, beaten

Directions:

  1. In a mixing bowl, blend all ingredients except the egg white and knead well until a dough forms and doesn’t stick to your hands.
  2. Shape the dough into a ball, cover with plastic wrap and allow to rest for an hour.
  3. Heat the oven to 350 degrees. Line a baking sheet with parchment paper.
  4. Slightly wet your hands and form the dough into marble sized balls (about ½ inch)
  5. Using your thumb, flatten each ball slightly.
  6. Brush with the beaten egg white.
  7. Bake for about 20 minutes, until the kruidnoten puff up and turn a slightly darker shade of brown.
  8. Cool completely.

Of course if you want to save some time, you can always start with Koopman's Kruidnoten mix or just get them already made.
